SALMON
WHOLE-WHEAT PASTA SALAD
This
easy, quick dish is rich in folate and omega-3 fatty acids which are
good for the heart |

SERVES 2
2 boiled (or microwaved) salmon fillets
1 cup boiled wholewheat pasta
3 tomatoes
1 fresh cucumber
1oz/28g lettuce
2 tbs. fresh green peas
1/2 cup chopped leeks
3 tbs. grapefruit juice
Slice tomatoes, cucumber, leeks and lettuce. Add green peas and
pasta. Flake salmon. Mix all ingredients and toss with the grapefruit
juice.
