SERVES 2
1 medium beetroot, boiled and peeled
1 carrot, boiled and peeled
1 potato, boiled and peeled
1 onion
2 tbs. fresh green peas
1/2 fresh cucumber
1 tbs. olive oil
1 tbs. balsamic vinegar
Dice beetroot, carrot, potato and cucumber. Finely chop, sautee
and cool onion. Spoon all ingredients into bowl, sprinkle with olive
oil and vinegar. Mix well.
